Ingredients:
1/3 cup cream of rice, or cream of wheat, or corn meal (kapha reducing)
1 pinch saffron
1 Tbsp. milk
2 to 3 Tbs. ghee
1 cup milk
1 cup water
1/4 cup sucanat or raw sugar (or to taste)
1 tsp. charole nuts (optional)
1/4 tsp. ground cardamom
1 heaping Tbsp. almonds, peeled and sliced
Soak the saffron in 1 tablespoon of milk for a few minutes.
Heat a saucepan and add the ghee and chosen grain meal. Stir constantly and mix well for a few minutes or until the grain is lightly toasted and gives off a fragrant smell.
Pour in the milk, water, and soaked saffron into the grain meal, stirring quickly to prevent lumps from forming. Then add the charole nuts, almonds, cardamom.
Stir constantly to keep it from sticking to the pan, and bring to a gentle boil. Cook and stir until it reaches a semi thick consistency.
Serve warm. Sprinkle with ground cinnamon (optional).
This recipe is good or all doshas, but kapha should eat it in moderation, unless it is made with corn meal.
