Legumes play an important role in the highly evolved vegetarian cuisine of India, as well as in Ayurvedic cuisine, since they are an easily digestible form of high protein. Moong (Mung) Dal is one of the easiest to cook and digest of the lentil and bean family. It is very popular in India where it is used both for formal entertaining as well as everyday cooking.
Along with yellow mung dal, this green mung dal is the preferred Indian pulse, especially if you have digestive problems, as it is very gentle on the stomach. It makes excellent soup and is a very tasty and nourishing type of dal (lentil).
These split moong beans are extremely easy to cook both as soup or as salty breakfast pancakes (See our Recipes Section for a recipe). Great when accompanied with Basmati rice.
