Basmati rice is known as the queen of rice. It has been cultivated for centuries at the foot of the Himalayas. The rivers Yamuna and Ganges feed these rice fields. It is a long grained, non glutinous and fragrant rice that has been the main dish on the royal menus of various cultures, from the pilav of Turkey, polou of Persia, pilafs of the Steppes, the isotos and paellas of the Mediterranean, to the pilau of India. It has been served to great sultans, maharajahs, shah?s and emperors.

It is valued in Ayurvedic and Indian cooking because it is a whole grain, much the contrary of popular thought that white rice is never whole. Asian rices come in a variety of colors and hues, and white Basmati rice is a whole grain, rich in nutrients and easy to digest. It is lighter and sweeter than brown Basmati rice. The process of making it white does not entail any bleaching.

Spices, nuts, dried fruits, vegetables and herbs can be added to Basmati rice for extra flavor. Basmati rice transforms rice dishes into extraordinary meals.

Basmati rice is not very good for puddings, burgers or any dish where the rice is not displayed whole. For such dishes parboiled rice or short grained rice is preferred.
